Thanks, Alex. 

I tried both of these options, and appending with ?ec3_after=today only
works if I'm using 'keep events separate' mode. 

However when I use this mode it's obviously stripping out those posts
which don't have dates. 

Any ideas how I can show both posts with and without dates on the same
page, sorted chronologically?

You have two choices:

1. Turn on "Keep Events Separate" mode, in the options screen.

2. Use an advanced query instead of the normal category page. Something
like this should do what you want...
